Ingredients
1 cup orzo
1 tablespoon olive oil
3 cloves garlic, minced
1⁄3 cup sun-dried tomatoes, chopped
2 1⁄4 cups vegetable broth
1⁄2 cup heavy cream
1⁄2 cup grated parmesan cheese
2 cups baby spinach
1⁄2 teaspoon salt
1⁄4 teaspoon black pepper
Instructions
1. Heat olive oil in a skillet over medium heat. Add garlic and sun-dried tomatoes and sauté for 2 to 3 minutes until fragrant.
2. Add orzo and toast for 1 to 2 minutes, stirring constantly.
3. Pour in the vegetable broth and bring to a boil. Reduce to a simmer and cook uncovered for 8 to 10 minutes, stirring often, until orzo is tender.
4. Stir in heavy cream and spinach. Let spinach wilt and sauce thicken slightly.
5. Turn off heat and stir in grated parmesan until creamy. Season with salt and pepper. Serve warm.
