Description
Creamy Herb Chicken Thighs with Carrots & Mash is a comforting chicken dinner made with juicy chicken thighs, tender carrots, fluffy mashed potatoes, and a rich garlic herb cream sauce for an easy family meal.
Ingredients
6 bone-in, skin-on chicken thighs
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 small onion, finely chopped
3 garlic cloves, minced
4 medium carrots, peeled and sliced
1 cup chicken stock
3/4 cup heavy cream
1 tablespoon fresh thyme leaves
2 tablespoons fresh parsley, chopped
2 pounds potatoes, peeled and chopped
4 tablespoons butter
1/2 cup milk
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. Place the chopped potatoes in a large pot of salted water and boil until fork tender, about 15 to 20 minutes.
2. Drain the potatoes, then mash them with butter, milk, salt, and black pepper until smooth and fluffy. Cover and keep warm.
3. Pat the chicken thighs dry and season them with salt and black pepper on both sides.
4. Heat the olive oil in a large skillet over medium-high heat and sear the chicken thighs until golden brown on both sides. Remove them to a plate.
5. In the same skillet, add the chopped onion and cook until softened, then stir in the garlic and sliced carrots. Cook for 3 to 4 minutes.
6. Pour in the chicken stock and scrape up the browned bits from the bottom of the pan. Stir in the heavy cream and thyme.
7. Return the chicken thighs to the skillet, cover, and simmer for 20 to 25 minutes until the chicken is cooked through and the carrots are tender.
8. Stir in the chopped parsley just before serving.
9. Spoon the mashed potatoes onto plates, top with chicken thighs and carrots, then finish with plenty of creamy herb sauce.
Notes
Use chicken thighs for the best flavor and the most tender texture in the creamy sauce.
Cut the carrots into even slices so they cook through at the same rate.
Add a splash of extra stock when reheating leftovers to keep the sauce smooth and creamy.
