Description

Creamy Green Goddess Salad is a fresh, crunchy salad packed with cabbage, romaine, cucumber, herbs, and a creamy green goddess dressing. This easy green goddess salad recipe is perfect as a light lunch, healthy side dish, or refreshing salad for spring and summer meals.


Ingredients

4 cups chopped green cabbage

2 cups chopped romaine lettuce

1 cup diced cucumber

3 sliced green onions

1/2 cup fresh parsley

1/4 cup fresh chives

1/4 cup fresh basil

1/2 cup plain Greek yogurt

1/4 cup mayonnaise

2 tablespoons lemon juice

1 garlic clove

1 tablespoon olive oil

1/2 teaspoon salt

1/4 teaspoon black pepper

1 avocado, diced optional


Instructions

1. Finely chop the cabbage, romaine lettuce, cucumber, and green onions, then add them to a large mixing bowl.

2. Add the parsley, chives, basil, Greek yogurt, mayonnaise, lemon juice, garlic, olive oil, salt, and black pepper to a blender or food processor.

3. Blend the dressing until smooth, creamy, and bright green.

4. Taste the dressing and adjust with a little more lemon juice or salt if needed.

5. Pour the dressing over the chopped vegetables and toss until everything is evenly coated.

6. Fold in the diced avocado if using.

7. Serve immediately, or chill for a few minutes before serving for an extra crisp salad.

Notes

For the best texture, chop the vegetables small so the dressing coats every bite evenly.

If you want to make it ahead, store the dressing and vegetables separately until serving time.

This salad is best enjoyed fresh, but leftovers can be refrigerated for up to 1 day.
