Ingredients
2 large chicken breasts, halved lengthwise
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon paprika
1 teaspoon Italian seasoning
2 tablespoons olive oil
2 tablespoons butter
4 cloves garlic, minced
3/4 cup chicken broth
1 cup heavy cream
1/2 cup grated parmesan cheese
1/3 cup chopped sun dried tomatoes
1/4 teaspoon red pepper flakes
2 tablespoons chopped fresh basil
Instructions
1. Pat the chicken dry and season both sides with salt, black pepper, paprika, and Italian seasoning.
2. Heat the olive oil in a large skillet over medium heat. Sear the chicken for 4 to 5 minutes per side until golden brown. Remove it to a plate.
3. In the same skillet, melt the butter and add the minced garlic. Cook for about 30 seconds until fragrant.
4. Pour in the chicken broth and scrape up the browned bits from the pan.
5. Stir in the heavy cream, parmesan cheese, sun dried tomatoes, and red pepper flakes. Simmer for 3 to 4 minutes until the sauce starts to thicken.
6. Return the chicken to the skillet and spoon some sauce over the top. Simmer for 5 to 8 minutes until the chicken is cooked through.
7. Sprinkle with fresh basil and serve hot with your favorite side dish.
Notes
Use thin chicken cutlets or slice large breasts in half so they cook evenly and stay tender.
Freshly grated parmesan melts more smoothly into the sauce than pre shredded cheese.
If the sauce thickens too much during reheating, add a splash of broth or cream to loosen it.
