Creamy Crockpot Mac and Cheese is a rich, cheesy slow cooker pasta dish made with elbow macaroni, cheddar, mozzarella, cream cheese, and evaporated milk for an easy comfort food side that is creamy, cozy, and perfect for family dinners, potlucks, and holiday meals.
Ingredients
2 cups elbow macaroni
2 tablespoons butter
1 can evaporated milk
1 1/2 cups whole milk
2 cups shredded sharp cheddar cheese
1 cup shredded mozzarella cheese
4 ounces cream cheese
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/4 teaspoon paprika
Instructions
1. Bring a large pot of salted water to a boil and cook the elbow macaroni for 1 to 2 minutes less than the package directions. Drain well.
2. Lightly grease the inside of the crockpot with butter or nonstick spray.
3. Add the drained macaroni, butter, evaporated milk, whole milk, shredded cheddar, shredded mozzarella, cream cheese, salt, black pepper, garlic powder, and paprika to the crockpot.
4. Stir gently until the ingredients are evenly combined.
5. Cover and cook on low for 1 1/2 to 2 1/2 hours, stirring once or twice if possible, until the cheese is melted and the pasta is tender.
6. Stir well before serving. Add a small splash of warm milk if needed to loosen the sauce.
Notes
Freshly shredded cheese melts more smoothly and gives the sauce a creamier texture.
Do not overcook the pasta before adding it to the crockpot or it can become too soft.
A splash of warm milk stirred in before serving helps keep the mac and cheese silky and creamy.
