Description

Creamy Chicken Tortellini Soup is a rich and comforting chicken soup made with tender shredded chicken, cheese tortellini, fresh spinach, parmesan, and a silky herb-seasoned broth, making it a cozy family dinner recipe for busy weeknights or cold evenings.


Ingredients

2 tablespoons butter

1 tablespoon olive oil

1 small yellow onion, diced

2 medium carrots, peeled and sliced

2 celery stalks, sliced

3 cloves garlic, minced

1 teaspoon Italian seasoning

1/2 teaspoon dried basil

1/2 teaspoon salt

1/4 teaspoon black pepper

3 tablespoons all-purpose flour

6 cups chicken broth

2 cups cooked shredded chicken

18 ounces cheese tortellini

1 cup heavy cream

3/4 cup grated parmesan cheese

2 cups fresh baby spinach

1 tablespoon lemon juice

2 tablespoons chopped fresh parsley


Instructions

1. Melt the butter and olive oil in a large pot over medium heat. Add the onion, carrots, and celery, then cook for 6 to 8 minutes until softened.

2. Stir in the garlic, Italian seasoning, dried basil, salt, and black pepper, and cook for 30 seconds.

3. Sprinkle the flour over the vegetables and stir well. Cook for 1 minute.

4. Slowly pour in the chicken broth while stirring until smooth.

5. Add the shredded chicken and bring the soup to a gentle simmer. Cook for 8 minutes.

6. Stir in the cheese tortellini and cook for 4 to 6 minutes, or until tender.

7. Reduce the heat to low and stir in the heavy cream, parmesan cheese, and spinach.

8. Add the lemon juice and parsley, then stir until the spinach wilts and the soup is creamy.

9. Serve hot with extra parmesan if desired.

Notes

Use rotisserie chicken to make this soup even quicker on busy nights.

Add the tortellini near the end so it stays tender and does not overcook.

If the soup thickens in the fridge, stir in a splash of broth or cream when reheating.
