Ingredients
1.5 pounds chicken breast or thighs
2 chipotle peppers in adobo sauce
2 cloves garlic, minced
2 tablespoons honey
2 tablespoons lime juice
1 teaspoon salt
1/2 cup mayonnaise
1 tablespoon sriracha
2 tablespoons sweet chili sauce
Instructions
1. Cut chicken into bite-sized cubes and set aside.
2. In a blender, mix chipotle peppers, garlic, honey, lime juice, and salt until smooth.
3. Toss the chicken in the marinade and refrigerate for at least 30 minutes.
4. Thread chicken onto soaked wooden or metal skewers.
5. Grill over medium-high heat for 10–12 minutes or bake at 425°F for 20–25 minutes, flipping halfway.
6. Mix mayonnaise, sriracha, and sweet chili sauce for the bang bang sauce.
7. Brush sauce over cooked skewers or serve on the side for dipping.
8. Garnish with chopped cilantro or extra lime wedges if desired.
Notes
Marinate the chicken longer for deeper flavor.
Adjust sriracha in the sauce based on your heat preference.
