Ingredients
12 ounces chicken apple sausage, sliced
1 tablespoon olive oil
1 small yellow onion, finely chopped
3 cloves garlic, minced
8 ounces penne pasta
2 cups chicken broth
1 cup heavy cream
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cups baby spinach
1/2 cup grated parmesan cheese
2 tablespoons fresh parsley, chopped
Instructions
1. Heat the olive oil in a large deep skillet over medium heat. Add the sliced chicken apple sausage and cook for 4 to 5 minutes until lightly browned.
2. Add the chopped onion and cook for 3 to 4 minutes until softened. Stir in the garlic and cook for 30 seconds.
3. Add the penne, chicken broth, heavy cream, Italian seasoning, salt, and black pepper. Stir well to combine.
4. Bring the mixture to a gentle simmer, then cover loosely and cook for 12 to 15 minutes, stirring every few minutes, until the pasta is tender.
5. Stir in the baby spinach and let it wilt into the hot pasta.
6. Add the parmesan cheese and stir until the sauce is creamy and coats the pasta evenly.
7. Garnish with fresh parsley and serve warm.
Notes
Add a small splash of extra broth if the pasta absorbs the liquid too quickly before turning tender.
Use freshly grated parmesan for the smoothest sauce and the best flavor.
This pasta reheats well with a little cream or broth stirred in to loosen the sauce.
