Ingredients
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup unsalted butter, softened
3/4 cup brown sugar
1/2 cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
3/4 cup chopped maraschino cherries, well drained and patted dry
1 1/2 cups semi-sweet chocolate chips
Instructions
1. Preheat the oven to 350°F and line two baking sheets with parchment paper.
2. In a medium bowl, whisk together the flour, baking soda, and salt.
3. In a large bowl, beat the softened butter, brown sugar, and granulated sugar until light and fluffy.
4. Add the eggs one at a time, then mix in the vanilla extract.
5. Gradually mix the dry ingredients into the wet ingredients until just combined.
6. Fold in the chopped cherries and chocolate chips gently.
7. Scoop tablespoon-sized portions of dough onto the prepared baking sheets, spacing them apart.
8. Bake for 10 to 12 minutes, until the edges are lightly golden and the centers are still soft.
9. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.
Notes
Pat the cherries very dry before adding them to the dough so the cookies keep the right texture.
Do not overmix the dough once the flour is added or the cookies can turn out dense.
For thicker cookies, chill the dough for 20 to 30 minutes before baking.
