Description

Cheesy Chicken Tater Tot Casserole is a creamy, comforting dinner made with shredded chicken, crispy tater tots, cheddar cheese, and a rich savory sauce. Ingredients

3 cups cooked shredded chicken

1 bag frozen tater tots, 32 ounces

2 cups shredded cheddar cheese, divided

1 can cream of chicken soup, 10.5 ounces

1 cup sour cream

1 cup milk

1 small onion, finely diced

1 cup frozen mixed vegetables

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon black pepper

1/2 teaspoon salt

2 tablespoons chopped parsley, optional


Instructions

1. Preheat the oven to 375°F and lightly grease a 9×13-inch baking dish.

2. In a large bowl, mix the shredded chicken, cream of chicken soup, sour cream, milk, diced onion, mixed vegetables, garlic powder, onion powder, black pepper, salt, and 1 cup of the cheddar cheese until fully combined.

3. Spread the chicken mixture evenly into the prepared baking dish.

4. Arrange the frozen tater tots in a single layer over the top.

5. Bake for 35 to 40 minutes, until the filling is bubbling and the tater tots are golden and crisp.

6. Sprinkle the remaining 1 cup of cheddar cheese over the top and bake for 5 to 8 minutes more, until melted.

7. Let the casserole rest for 5 to 10 minutes, then garnish with chopped parsley if desired and serve.

Notes

Use rotisserie chicken to make prep even easier and add extra flavor.

Bake the casserole uncovered so the tater tots stay crisp on top.
