Description

Carrot Cake Cheesecake Bars are a rich and creamy dessert made with moist spiced carrot cake, smooth cheesecake filling, fresh grated carrots, cream cheese, cinnamon, and vanilla for an easy bar recipe that is perfect for Easter, spring gatherings, holidays, or anytime you want a homemade dessert with classic carrot cake flavor.


Ingredients

1 1/4 cups all-purpose flour

1 teaspoon baking powder

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon salt

1/2 cup brown sugar

1/2 cup granulated sugar, divided

1/2 cup vegetable oil

3 large eggs, divided

1 teaspoon vanilla extract, divided

1 1/2 cups finely grated carrots

8 ounces cream cheese, softened


Instructions

1. Preheat the oven to 350°F and line an 8×8-inch baking pan with parchment paper, leaving overhang on the sides for easy lifting.

2. In a medium bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt.

3. In a large bowl, whisk together the brown sugar, 1/4 cup of the granulated sugar, vegetable oil, 2 eggs, and 1/2 teaspoon vanilla extract until smooth.

4. Stir in the grated carrots, then fold in the dry ingredients just until combined.

5. In a separate bowl, beat the softened cream cheese with the remaining 1/4 cup granulated sugar, 1 egg, and remaining 1/2 teaspoon vanilla extract until smooth and creamy.

6. Spread most of the carrot cake batter into the prepared pan, reserving a few spoonfuls for the top.

7. Pour the cheesecake mixture over the carrot cake layer and spread it gently into an even layer.

8. Drop the reserved carrot cake batter over the cheesecake layer in small spoonfuls, then lightly swirl with a knife.

9. Bake for 32 to 38 minutes, until the center is set and a toothpick inserted into the carrot cake portion comes out with a few moist crumbs.

10. Cool completely, then refrigerate for at least 2 hours before slicing into bars.

Notes

Use freshly grated carrots for the softest texture and best moisture.

Let the cream cheese come fully to room temperature so the cheesecake layer stays smooth.

Chill the bars before slicing for the cleanest edges and the best texture.
