Ingredients
2 large sweet potatoes
2 tablespoons cornstarch
2 tablespoons olive oil
1 teaspoon salt
1 teaspoon paprika
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
1 tablespoon chopped parsley optional
Instructions
1. Preheat your oven to 425°F and line a large baking sheet with parchment paper.
2. Peel the sweet potatoes if desired, then slice them into thin, even fries.
3. Pat the sweet potato fries very dry with paper towels to remove excess moisture.
4. Place the fries in a large bowl and toss them with the cornstarch until lightly coated.
5. Add the olive oil, salt, paprika, garlic powder, and black pepper, then toss again until evenly seasoned.
6. Arrange the fries in a single layer on the prepared baking sheet, making sure they are not crowded.
7. Bake for 15 minutes, then flip the fries carefully.
8. Return them to the oven and bake for 10 to 15 minutes more, until the edges are browned and the fries are tender inside.
9. Let the fries rest for 2 to 3 minutes, then sprinkle with chopped parsley if using.
10. Serve hot with your favorite dipping sauce.
Notes
Drying the fries well before seasoning helps them bake up with a better texture.
Do not overcrowd the pan or the fries will steam instead of crisp.
For extra crisp edges, use two baking sheets if needed.
