Description

Beef and Broccoli is a quick and flavorful stir fry recipe made with tender sliced beef, crisp broccoli, garlic, ginger, and a savory soy based sauce. This easy homemade Beef and Broccoli is perfect for a fast weeknight dinner and tastes delicious served over rice or noodles.


Ingredients

1 pound flank steak, thinly sliced against the grain

4 cups broccoli florets

2 tablespoons soy sauce

3 tablespoons soy sauce

2 tablespoons oyster sauce

1 tablespoon brown sugar

3 teaspoons cornstarch

3/4 cup beef broth

3 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 teaspoon sesame oil

2 tablespoons neutral oil

1/4 teaspoon black pepper

3 cups cooked rice


Instructions

1. Slice the flank steak thinly against the grain and place it in a bowl with 2 tablespoons soy sauce and 1 teaspoon cornstarch. Toss well and let it marinate for 15 minutes.

2. In a small bowl, whisk together 3 tablespoons soy sauce, oyster sauce, brown sugar, 2 teaspoons cornstarch, beef broth, garlic, ginger, sesame oil, and black pepper until smooth.

3. Blanch the broccoli in boiling water for 2 to 3 minutes until bright green and just tender. Drain well and set aside.

4. Heat 1 tablespoon neutral oil in a large skillet or wok over medium high heat. Add half the beef and sear quickly until nearly cooked through. Remove and repeat with the remaining oil and beef.

5. Pour the sauce into the skillet and stir for 1 to 2 minutes until it thickens slightly.

6. Return the beef to the pan and add the broccoli. Toss everything together until evenly coated and heated through.

7. Serve hot over cooked rice.

Notes

For the most tender beef, always slice against the grain.

Do not overcrowd the pan while cooking the beef or it will steam instead of sear.

Blanching the broccoli first helps it stay bright green and perfectly crisp tender.
