Description

Autumn Harvest Honeycrisp Apple and Feta Salad is a fresh, colorful fall salad made with crisp Honeycrisp apples, mixed greens, crumbled feta, dried cranberries, toasted pecans, and a sweet tangy honey apple cider dressing. This easy apple feta salad is perfect for autumn lunches, holiday gatherings, and light seasonal dinners when you want something crisp, creamy, crunchy, and full of harvest flavor.


Ingredients

6 cups mixed greens

2 Honeycrisp apples, thinly sliced

1/2 cup crumbled feta cheese

1/3 cup dried cranberries

1/2 cup pecans, toasted

1/4 small red onion, thinly sliced

3 tablespoons olive oil

1 1/2 tablespoons honey

1 tablespoon apple cider vinegar

1 teaspoon Dijon mustard

1/4 teaspoon salt

1/4 teaspoon black pepper


Instructions

1. Wash and dry the mixed greens well, then place them in a large serving bowl.

2. Core the Honeycrisp apples and slice them thinly. Leave the peel on for color and texture if you like.

3. Toast the pecans in a dry skillet over medium heat for 3 to 4 minutes, stirring often, until fragrant. Let them cool.

4. In a small bowl or jar, whisk together the olive oil, honey, apple cider vinegar, Dijon mustard, salt, and black pepper until smooth.

5. Add the sliced apples, crumbled feta, dried cranberries, toasted pecans, and red onion over the greens.

6. Drizzle the dressing over the salad just before serving.

7. Toss gently until evenly coated, then serve immediately.

Notes

Toast the pecans gently and do not walk away from the skillet because nuts can go from perfect to burnt very quickly.

Slice the apples right before serving for the prettiest presentation and the best texture.

Thinly sliced red onion gives the salad flavor without overpowering the sweeter ingredients.
