Ingredients
1 cup white chocolate chips
4 oz cream cheese, softened
1/2 teaspoon peppermint extract
1/2 cup powdered sugar
1/4 cup sparkling sugar or sanding sugar
2 tablespoons crushed peppermint candies (optional)
Instructions
1. Melt white chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth. Let cool slightly.
2. In a separate bowl, beat the cream cheese until fluffy. Add peppermint extract and powdered sugar, mixing until smooth.
3. Stir in the melted white chocolate until the mixture is well combined.
4. Cover and chill the mixture for at least 1 hour until firm.
5. Scoop and roll mixture into 1-inch balls, placing them on a parchment-lined baking sheet.
6. Roll truffles in sparkling sugar or crushed peppermint, pressing gently to coat.
7. Chill again for 30 minutes before serving.
Notes
Keep hands slightly damp when rolling to prevent sticking.
Make ahead and freeze for up to a month.
Swap peppermint for almond or vanilla extract for different flavors.
