Ingredients
12 oz rotini pasta
1/2 lb ground beef
1/2 lb Italian sausage
3 cups fresh spinach
4 garlic cloves, minced
4 tbsp butter
2 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1/2 cup grated Parmesan cheese
1/4 tsp red pepper flakes (optional)
Instructions
1. Boil a large pot of salted water and cook the rotini according to package directions until al dente. Reserve 1 cup of pasta water, then drain.
2. In a large skillet, heat olive oil over medium heat. Add the ground beef and Italian sausage, breaking them up with a spoon. Cook until browned and fully cooked through.
3. Add butter and minced garlic to the skillet with the meat. Stir until the garlic becomes fragrant, about 1-2 minutes.
4. Toss in the spinach and stir until it wilts into the meat and garlic butter mixture.
5. Add the cooked rotini to the skillet. If it seems dry, pour in some reserved pasta water a little at a time. Toss everything until well combined.
6. Season with salt, black pepper, and red pepper flakes if using. Top with a generous sprinkle of Parmesan cheese before serving.
Notes
Use spicy Italian sausage for a kick of heat.
Fresh spinach wilts quickly, so add it last.
For extra creaminess, stir in a splash of heavy cream or a dollop of ricotta.
