Ingredients
1 pound penne pasta
2 cups cooked chicken breast or rotisserie chicken
1 cup Velveeta cheese, cubed
1 cup shredded mozzarella cheese
3 cloves garlic, minced
1 1/2 cups milk
2 tablespoons butter
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon olive oil
Instructions
1. Boil the penne pasta in salted water until al dente. Drain and set aside.
2. Season chicken breast with salt and pepper and cook in olive oil until golden and fully cooked. If using rotisserie chicken, shred and set aside.
3. In a saucepan, melt butter and sauté minced garlic until fragrant. Add milk and Velveeta cubes. Stir continuously over low heat until smooth.
4. Add shredded mozzarella to the sauce and stir until fully melted and creamy.
5. Combine the cooked pasta and chicken into the cheese sauce. Stir to coat everything evenly.
6. Simmer for a few minutes to let flavors meld. Serve hot with extra mozzarella on top if desired.
Notes
Use penne rigate for better sauce grip.
Add a splash of milk when reheating leftovers.
Spinach or sun-dried tomatoes make great add-ins.
