Ingredients
8 oz linguine
2 chicken breasts
1 tbsp olive oil
1 tbsp Cajun seasoning
2 cloves garlic, minced
1 cup heavy cream
8 oz Velveeta cheese, cubed
1/4 cup Parmesan cheese, grated
2 tbsp butter
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp red pepper flakes (optional)
1 tbsp fresh parsley, chopped (optional)
Instructions
1. Bring a large pot of salted water to a boil and cook the linguine until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
2. Cut the chicken breasts into bite-sized pieces and toss with Cajun seasoning.
3. Heat olive oil in a skillet over medium-high heat and sauté the chicken until golden and fully cooked. Remove and set aside.
4. In the same skillet, add butter and minced garlic. Cook until fragrant.
5. Pour in the heavy cream, then stir in Velveeta cubes. Stir until melted and smooth.
6. Add Parmesan cheese and red pepper flakes, stirring to blend.
7. Return cooked chicken and linguine to the skillet. Toss everything together until evenly coated.
8. Use reserved pasta water to thin the sauce if needed.
9. Season with salt and black pepper to taste.
10. Garnish with parsley and serve hot.
Notes
Use freshly grated Parmesan for best flavor.
