Description
These Vegan Sweet Potato Brownies are fudgy, rich, and naturally sweetened. Made with almond flour, cocoa, and creamy nut butter, they are the perfect gluten-free and dairy-free chocolate treat.
Ingredients
1 cup sweet potato puree
1/2 cup almond flour
1/3 cup cocoa powder
1/3 cup maple syrup
1/4 cup nut butter (almond or peanut)
1 tsp vanilla extract
1/2 tsp baking powder
1/3 cup dairy-free dark chocolate chips
Instructions
1. Roast the sweet potatoes until soft, then mash or puree until smooth.
2. In a bowl, mix sweet potato puree, maple syrup, nut butter, and vanilla.
3. Add almond flour, cocoa powder, and baking powder. Mix into a thick batter.
4. Fold in the chocolate chips.
5. Spread the batter into a lined baking dish and smooth the top.
6. Bake at 350°F (175°C) for 25–30 minutes.
7. Let cool completely in the pan before slicing.
Notes
Use roasted, not steamed, sweet potatoes for best flavor.
Let the brownies cool fully to achieve the fudgiest texture.
