Ingredients
3 to 4 lb chuck roast
1 tsp salt
1/2 tsp black pepper
2 tbsp olive oil
1 large onion, chopped
4 cloves garlic, minced
3 carrots, peeled and chopped
2 celery stalks, chopped
1.5 lb baby potatoes, halved
2 cups beef broth
2 tbsp tomato paste
1 tbsp Worcestershire sauce
2 bay leaves
4 sprigs fresh thyme
Instructions
1. Pat the chuck roast dry and season with salt and pepper.
2. In a large Dutch oven, heat olive oil and sear the roast on all sides until browned. Remove and set aside.
3. In the same pot, sauté onion, garlic, carrots, and celery until softened.
4. Stir in tomato paste and cook for a minute, then pour in beef broth and Worcestershire sauce, scraping up the browned bits.
5. Return the roast to the pot, add potatoes, bay leaves, and thyme.
6. Cover and bake in a 300°F oven for 3.5 to 4 hours until the meat is fork-tender.
7. Discard bay leaves and thyme stems. Shred the roast and serve hot with the vegetables and pan gravy.
Notes
This roast tastes even better the next day as flavors deepen overnight.
If you want to use a slow cooker, sear the beef and veggies first for the best flavor.
You can add mushrooms or swap potatoes for mashed for variation.
