Ingredients
1 can black beans, drained and rinsed
1 can black-eyed peas, drained and rinsed
1 cup corn kernels (fresh or canned)
1 red bell pepper, diced
2 roma tomatoes, diced
1 small red onion, finely chopped
1 jalapeño, minced
1 avocado, diced (optional)
1 handful cilantro, chopped
3 tablespoons olive oil
2 tablespoons lime juice
1 tablespoon red wine vinegar
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Drain and rinse the black beans and black-eyed peas. Place in a large mixing bowl.
2. Dice the red bell pepper, roma tomatoes, red onion, and jalapeño. Add to the bowl.
3. In a separate small bowl, whisk together the olive oil, lime juice, red wine vinegar, garlic powder, salt, and black pepper.
4. Pour the dressing over the bean and vegetable mixture. Stir to combine.
5. Refrigerate for at least 30 minutes to allow flavors to meld.
6. Before serving, gently fold in chopped avocado and cilantro.
7. Serve chilled with tortilla chips or as a topping for proteins and grains.
Notes
This dip tastes better after chilling for at least 30 minutes.
