Description

Tuscan Garlic Chicken Bites & Sun-Dried Tomato Cajun Alfredo Pasta is a creamy, spicy pasta dish combining juicy chicken, Cajun Alfredo sauce, and sun-dried tomatoes. Ingredients

1.5 lbs chicken breast or thighs

2 tablespoons olive oil

4 garlic cloves, minced

1 teaspoon Italian seasoning

1 teaspoon salt

1/2 teaspoon black pepper

1.5 teaspoons Cajun seasoning

1/2 cup sun-dried tomatoes, chopped

1.5 cups heavy cream

1 cup Parmesan cheese, grated

2 tablespoons butter

12 oz pasta (fettuccine or penne)

2 tablespoons fresh parsley (optional)


Instructions

1. Cut chicken into bite-sized pieces and season with salt, black pepper, Italian seasoning, and Cajun spice.

2. Heat olive oil in a skillet over medium-high heat and sear the chicken until golden and fully cooked. Remove and set aside.

3. In the same skillet, melt butter and sauté minced garlic until fragrant.

4. Add sun-dried tomatoes and stir, then pour in heavy cream. Let it simmer until slightly thickened.

5. Stir in Parmesan cheese and adjust seasoning with more Cajun spice if needed. Simmer until creamy.

6. Cook pasta according to package directions, reserving some pasta water.

7. Combine the cooked pasta and chicken into the sauce, tossing well. Add pasta water if needed for a silky texture.

8. Garnish with fresh parsley and extra Parmesan, then serve warm.

Notes

Let sauce simmer on low to prevent splitting.

Use chicken thighs for extra juiciness.
