Ingredients
2 cups cooked turkey
6 oz egg noodles
2 carrots, sliced
2 celery stalks, sliced
1 medium onion, diced
2 cloves garlic, minced
6 cups chicken or turkey broth
1 tablespoon olive oil
2 bay leaves
1 teaspoon dried thyme
Salt and pepper to taste
2 tablespoons chopped fresh parsley (optional)
Instructions
1. Heat olive oil in a large pot over medium heat. Add onions, celery, and carrots. Sauté until softened, about 5 minutes.
2. Add minced garlic and cook for another minute until fragrant.
3. Pour in the broth and add bay leaves and thyme. Bring to a simmer and cook for 10 minutes.
4. Add cooked turkey and egg noodles. Simmer for 7–10 minutes until noodles are tender.
5. Remove bay leaves. Season with salt and pepper to taste.
6. Garnish with fresh parsley if desired. Serve hot.
Notes
Let the soup cool before storing in airtight containers.
Use rotisserie chicken as a substitute if turkey isn’t available.
