Description
Traditional Italian Pastina Soup is the ultimate comfort food made with tiny pasta, chicken broth, butter, and parmesan. It’s perfect for soothing cold days or tender stomachs, ready in minutes and loved by all ages.
Ingredients
1/2 cup pastina
2 cups chicken broth
1 tablespoon butter
2 tablespoons grated Parmesan cheese
1 pinch salt
1 egg (optional)
Instructions
1. Add the chicken broth to a small saucepan and bring to a gentle boil over medium-high heat.
2. Stir in the pastina and reduce heat to medium. Simmer for 5 to 7 minutes, stirring occasionally, until tender.
3. Turn off the heat and stir in the butter until fully melted.
4. Add the grated Parmesan and stir until the soup turns creamy.
5. (Optional) Whisk an egg in a small bowl, then slowly pour it into the soup while stirring for a silky finish.
6. Taste and adjust salt as needed. Serve hot.
Notes
This soup thickens as it sits; add more broth when reheating.
You can swap butter for olive oil for a dairy-free version.
Use homemade chicken broth for an even richer flavor.
