Ingredients
2 tablespoons olive oil
1 yellow onion, diced
3 cloves garlic, minced
2 carrots, chopped
2 celery stalks, chopped
1 tablespoon Italian seasoning
2 tablespoons tomato paste
1 can (28 ounces) crushed tomatoes
4 cups vegetable broth
1 cup heavy cream
1 package (9 ounces) cheese tortellini
2 cups fresh spinach
½ cup grated Parmesan cheese
Salt and pepper to taste
Instructions
1. Heat olive oil in a large pot over medium heat. Add diced onion, minced garlic, chopped carrots, and celery. Sauté until vegetables soften, about 5-7 minutes.
2. Stir in tomato paste and Italian seasoning. Cook for 1 minute until fragrant.
3. Add crushed tomatoes and vegetable broth. Bring to a simmer and let cook for 10-15 minutes.
4. Add tortellini and cook according to package instructions, usually 5-7 minutes.
5. Reduce heat to low. Stir in heavy cream and fresh spinach. Cook until spinach wilts.
6. Season with salt and pepper to taste.
7. Serve hot with grated Parmesan on top and optional crusty bread on the side.
Notes
Use fresh or frozen tortellini — both work well.
Add cooked sausage or chicken for a protein boost.
Store leftovers in the fridge for up to 4 days; reheat gently with a splash of broth.
