Ingredients
1 cup unsalted butter, softened
1/2 cup brown sugar
1/4 cup granulated sugar
1 teaspoon vanilla extract
2 1/4 cups all-purpose flour
1/2 teaspoon salt
3/4 cup toffee bits
Instructions
1. Cream the butter, brown sugar, and granulated sugar until light and fluffy.
2. Mix in the vanilla extract, then add flour and salt until combined.
3. Fold in the toffee bits until evenly distributed.
4. Divide the dough and shape into two logs, wrap, and chill for at least 2 hours.
5. Preheat oven to 350°F (175°C). Slice chilled dough into 1/4-inch rounds.
6. Arrange on parchment-lined baking sheet and bake for 10-12 minutes until edges are golden.
7. Cool on baking sheet for 5 minutes, then transfer to wire rack.
Notes
Make sure butter is fully softened for easier mixing.
For extra flair, dip cooled cookies in melted chocolate.
Logs can be frozen and sliced as needed for fresh-baked cookies anytime.
