Description

Tiramisu Crinkle Cookies are the perfect blend of espresso, cocoa, and mascarpone wrapped in a chewy cookie with a powdered sugar crinkle. These cookies deliver rich tiramisu flavor in a fun, easy-to-make format. Great for holidays, coffee pairings, and cookie swaps.


Ingredients

1 ½ cups all-purpose flour

½ cup unsweetened cocoa powder

1 ½ teaspoons baking powder

1 tablespoon instant espresso powder

¼ teaspoon salt

½ cup granulated sugar

½ cup brown sugar

½ cup mascarpone cheese

½ cup unsalted butter (softened)

2 large eggs

1 teaspoon vanilla extract

½ cup powdered sugar (for rolling)


Instructions

1. In a medium bowl, whisk together the flour, cocoa powder, baking powder, espresso powder, and salt.

2. In another bowl, beat together the butter, mascarpone, granulated sugar, and brown sugar until fluffy.

3. Add eggs one at a time to the butter mixture, followed by the vanilla extract. Mix well.

4. Gradually mix the dry ingredients into the wet ingredients until just combined.

5. Cover and chill the dough in the refrigerator for at least 2 hours or overnight.

6. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

7. Scoop tablespoon-sized portions of dough, roll into balls, and coat generously in powdered sugar.

8. Place on baking sheet and bake for 10–12 minutes until edges are set and centers are soft.

9. Let cool on the sheet for a few minutes before transferring to a rack to cool completely.

Notes

Use good quality espresso powder for deeper flavor.

Don’t skip the chilling step—it’s key to the crinkle effect.

These cookies freeze well for up to one month.
