Ingredients
1 lb chicken breasts or thighs
1 cup grated Parmesan cheese
1 cup breadcrumbs
2 eggs
1 tsp garlic powder
1 tsp onion powder
1 tsp salt
1/2 tsp black pepper
2 tbsp olive oil or cooking spray
Instructions
1. Cut chicken into bite-sized pieces and pat them dry.
2. Season with a pinch of salt and pepper.
3. Whisk eggs in one bowl.
4. In another bowl, combine breadcrumbs, Parmesan, garlic powder, onion powder, salt, and pepper.
5. Dip chicken pieces in egg mixture, then coat in breadcrumb mixture.
6. Bake at 400°F for 20 minutes, flipping halfway, or pan-fry until golden and crispy.
7. For air fryer: cook at 375°F for 10-12 minutes, shaking halfway through.
