Description

These adorable Melted Snowman Peanut Butter Cookies combine soft, chewy peanut butter cookies with a fun holiday twist. Ingredients

1 cup creamy peanut butter

1/2 cup unsalted butter, softened

1/2 cup brown sugar

1/4 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1/2 teaspoon baking soda

1 1/4 cups all-purpose flour

24 large marshmallows

1/2 cup white frosting (store-bought or homemade)

Black decorating gel

Orange decorating gel

24 mini pretzel sticks or small candy canes


Instructions

1. In a large bowl, beat together butter, peanut butter, brown sugar, and granulated sugar until light and fluffy.

2. Add egg and vanilla extract to the mixture and beat until well combined.

3. In a separate bowl, whisk together flour and baking soda.

4. Gradually add dry ingredients into the wet ingredients until a soft dough forms.

5. Preheat oven to 350°F and line baking sheets with parchment paper.

6. Scoop out tablespoon-sized dough balls and roll them into smooth rounds. Place onto the baking sheets, spacing them evenly.

7. Bake cookies for 8–10 minutes, until edges are just set but centers remain soft.

8. Remove from oven and immediately press one marshmallow into the center of each cookie while still warm.

9. Allow cookies to cool completely so the marshmallow sets in place.

10. Spoon or pipe white frosting around each marshmallow to create a melted snowman effect.

11. Use black and orange decorating gels to draw eyes, buttons, and a carrot nose.

12. Finish decorating with pretzel sticks or candy canes for arms. Let frosting set before serving or storing.

Notes

These cookies are best eaten within 3 to 5 days.

If stacking for storage, use parchment paper between layers to protect the decorations.
