Ingredients
1 lb ground beef
1/2 cup breadcrumbs
1 large egg
2 cloves garlic, minced
1 tbsp fresh ginger, grated
2 green onions, finely chopped
2 tbsp soy sauce
1 tsp sesame oil
2 tbsp brown sugar
1 tbsp rice vinegar
1 tbsp gochujang
1/2 cup mayonnaise
1 to 2 tbsp sriracha
Instructions
1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. In a large bowl, mix ground beef, breadcrumbs, egg, garlic, ginger, green onions, soy sauce, and sesame oil just until combined.
3. Form into meatballs and place on the baking sheet. Bake for 15-18 minutes until cooked through.
4. In a saucepan, combine soy sauce, brown sugar, rice vinegar, gochujang, and water. Simmer until thickened.
5. Toss the baked meatballs in the glaze until well-coated.
6. In a small bowl, whisk together mayonnaise and sriracha to make the dip.
7. Serve meatballs warm with spicy mayo on the side. Garnish with extra green onions or sesame seeds if desired.
Notes
Use ground pork or chicken if preferred but adjust fat content for moisture.
Make extra glaze for drizzling over rice or noodles.
