Ingredients
16 oz rigatoni pasta
2 large chicken breasts
4 tbsp unsalted butter
5 garlic cloves, minced
1 cup chicken broth
1 cup heavy cream
1 cup Parmesan cheese, grated
1 tsp Italian seasoning
1 tsp salt
1/2 tsp black pepper
2 tbsp olive oil
2 tbsp fresh parsley, chopped
Instructions
1. Cut chicken breasts into bite-sized pieces. Heat olive oil in a large skillet and sear chicken until golden. Season with salt, pepper, and Italian seasoning. Remove and set aside.
2. In the same skillet, melt butter and sauté minced garlic until fragrant.
3. Add chicken broth and heavy cream. Simmer gently, then stir in Parmesan cheese until sauce is creamy.
4. Cook rigatoni in salted water until al dente. Drain and reserve 1/4 cup of pasta water.
5. Add chicken back to the skillet and toss in rigatoni. Stir gently, adding pasta water if needed to loosen the sauce.
6. Garnish with fresh parsley and extra Parmesan if desired. Serve warm.
Notes
Use freshly grated Parmesan for the best texture and flavor.
Don’t overcook the pasta—al dente gives the best bite and texture.
If reheating leftovers, add a splash of broth or cream to refresh the sauce.
