Ingredients
1 cup all-purpose flour
1 1/2 cups whole milk
2 large eggs
2 tablespoons melted butter
1/4 teaspoon salt
1 teaspoon vanilla extract (optional)
1 tablespoon sugar (optional)
Instructions
1. Combine flour, milk, eggs, melted butter, salt, vanilla, and sugar in a blender. Blend until smooth, about 30 seconds.
2. Let the batter rest for 30 minutes at room temperature or refrigerate overnight.
3. Preheat a nonstick skillet over medium heat and lightly grease with butter.
4. Pour 1/4 cup of batter into the pan and swirl to coat the bottom evenly.
5. Cook until edges lift and bottom is golden, about 1–2 minutes. Flip and cook 30 more seconds.
6. Transfer to a plate and repeat with remaining batter.
7. Stack cooked crepes and cover with a towel to keep warm until ready to serve.
Notes
Letting the batter rest helps the flour fully hydrate and results in more tender crepes.
You can refrigerate leftover batter for up to 2 days before using.
Parchment paper between crepes makes storage and reheating easier.
