Description

Texas Tamale Pie Casserole is a hearty Tex-Mex comfort dish made with seasoned ground beef, cheddar cheese, corn, and a fluffy cornbread topping. Perfect for family dinners, it’s easy to prepare, rich in flavor, and reheats beautifully. Great for weeknights, meal prep, or cozy gatherings.


Ingredients

1 pound ground beef

1 small onion, chopped

2 cloves garlic, minced

1 packet taco seasoning

1 can diced tomatoes with green chilies (10 oz)

1 cup corn kernels

1 ½ cups shredded cheddar cheese

1 box cornbread mix (8.5 oz)

1 egg

⅓ cup milk


Instructions

1. Brown the ground beef in a skillet over medium heat.

2. Add chopped onion and minced garlic. Cook until softened.

3. Stir in taco seasoning, diced tomatoes with green chilies, and corn. Simmer to blend flavors.

4. Preheat oven to 375°F.

5. Spread meat mixture in a greased baking dish.

6. Sprinkle shredded cheddar cheese evenly on top.

7. Mix cornbread mix with egg and milk in a bowl.

8. Pour cornbread batter over cheese layer, spreading gently.

9. Bake for 25 to 30 minutes, until golden and a toothpick comes out clean.

10. Let cool slightly before serving.

Notes

Let the casserole rest 5–10 minutes before slicing for better structure.

You can substitute ground turkey or chicken for a lighter version.

Top with jalapeños, cilantro, or sour cream to customize your serving.
