Ingredients
3 to 4 pounds chuck roast
1 can (14 oz) whole cranberry sauce
1/2 cup balsamic vinegar
1/2 cup beef broth
1 large onion, sliced
4 cloves garlic, minced
4 to 5 sprigs fresh thyme
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons olive oil
Instructions
1. Pat the chuck roast dry and season both sides with salt and pepper.
2. In a large skillet, heat olive oil over medium-high heat and sear the roast on all sides until browned.
3. Place sliced onions and minced garlic in the bottom of a slow cooker, then place the seared roast on top.
4. In a small bowl, mix together cranberry sauce, balsamic vinegar, and beef broth.
5. Pour the mixture over the roast and add thyme sprigs.
6. Cover and cook on low for 8 hours or until the beef is fork-tender.
7. Remove the roast, let it rest for 10 minutes, then slice or shred.
8. Spoon the sauce over the beef and serve hot.
Notes
Let the roast rest before slicing to keep it juicy.
Use homemade cranberry sauce if preferred.
