Description

These Sweet, Tangy, and Spicy Grilled Kabobs are a summer grilling favorite packed with bold flavor. Featuring a sticky marinade of sweet chili, honey, sriracha, and lime juice, they’re perfect for BBQs, weeknight dinners, or entertaining. This kabob recipe includes juicy meat, vibrant vegetables, and an optional tropical twist with pineapple.


Ingredients

1.5 pounds chicken thighs or beef sirloin, cubed

½ cup sweet chili sauce

3 tablespoons honey

3 tablespoons soy sauce

3 garlic cloves, minced

1 tablespoon sriracha

2 tablespoons lime juice

1 red bell pepper, chopped

1 yellow bell pepper, chopped

1 red onion, chopped

1 cup pineapple chunks (optional)


Instructions

1. In a bowl, whisk together sweet chili sauce, honey, soy sauce, garlic, sriracha, and lime juice.

2. Place cubed chicken or beef in a zip-top bag or bowl. Pour in half the marinade and refrigerate for at least 1 hour.

3. Chop the bell peppers, onion, and pineapple into even pieces.

4. Thread the marinated meat and vegetables onto skewers, alternating items. Discard used marinade and save the rest for basting.

5. Preheat grill to medium-high and lightly oil the grates. Grill skewers for 10–12 minutes, turning occasionally and basting.

6. Let rest a few minutes off the grill, then serve hot.

Notes

Add pineapple for a tropical touch.

Cut all pieces evenly for uniform grilling.

Soak wooden skewers for 30 minutes before grilling.
