Ingredients

1 1/2 cups graham cracker crumbs

6 tablespoons melted butter

1 cup mashed roasted sweet potatoes

16 ounces cream cheese

1/2 cup brown sugar

1/4 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon salt

Instructions

1. Preheat your oven to 325°F (163°C) and line an 8×8 inch pan with parchment paper.

2. Mix graham cracker crumbs and melted butter. Press into the bottom of the pan to form the crust. Bake for 8-10 minutes, then let cool slightly.

3. In a large bowl, beat cream cheese until smooth. Add roasted mashed sweet potatoes, brown sugar, and granulated sugar. Mix until well combined.

4. Add eggs one at a time, mixing thoroughly. Stir in vanilla extract, cinnamon, nutmeg, and salt. Mix until smooth and creamy.

5. Pour the filling over the prepared crust. Smooth the top evenly.

6. Bake for 35-40 minutes or until the center is set and edges are slightly puffed.

7. Let the cheesecake cool completely at room temperature, then refrigerate for at least 4 hours or overnight.

8. Slice into squares and serve with whipped cream or a drizzle of maple syrup.

Notes

Make sure your sweet potatoes are fully roasted and soft for best texture.

Use a warm knife to get clean edges when slicing chilled cheesecake.

For a festive twist, top with chopped pecans or a sprinkle of cinnamon sugar.
