Ingredients
2 large chicken breasts
1/2 cup sweet chili sauce
1 tablespoon soy sauce
2 cloves garlic, minced
1 teaspoon fresh ginger, grated
1/2 cup canned coconut milk
1 tablespoon lime juice
1 teaspoon honey
3 cups cooked jasmine rice
1/4 cup fresh cilantro, chopped
2 stalks green onions, thinly sliced
1 avocado, sliced (optional)
1 tablespoon sesame seeds (optional)
1/4 cup shredded carrots (optional)
Instructions
1. Cut the chicken breasts into bite-sized pieces. Season with salt and pepper.
2. In a large skillet over medium-high heat, sear the chicken pieces until browned and fully cooked. Remove and set aside.
3. In the same skillet, reduce heat to medium. Add garlic and ginger and cook for 30 seconds until fragrant.
4. Add sweet chili sauce and soy sauce. Stir and let simmer for 2–3 minutes until slightly thickened.
5. Return the chicken to the skillet and toss to coat in the glaze evenly.
6. In a small bowl, whisk together coconut milk, lime juice, and honey. Taste and adjust lime or honey as needed.
7. Scoop jasmine rice into bowls. Top with glazed chicken.
8. Drizzle the coconut lime sauce generously over the chicken and rice.
9. Garnish with cilantro, green onions, avocado slices, sesame seeds, or shredded carrots if desired.
10. Serve immediately and enjoy warm.
Notes
Always add the coconut drizzle just before serving to keep its freshness.
For a vegetarian version, swap chicken with crispy tofu or cauliflower.
