Description
This Summer Kielbasa Pasta is a quick one-skillet dinner recipe packed with smoked kielbasa sausage, summer vegetables, and pasta, making it the perfect easy family meal for warm nights. Ideal for busy weeknights, meal prep, or potlucks.
Ingredients
1 tablespoon olive oil
14 ounces kielbasa sausage, sliced
8 ounces pasta (rotini or penne)
1 cup cherry tomatoes, halved
1 cup corn kernels (fresh or frozen)
1 small zucchini, diced
2 cloves garlic, minced
1/2 cup grated Parmesan cheese
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup reserved pasta water (as needed)
Instructions
1. Heat olive oil in a large skillet over medium heat. Add sliced kielbasa and cook until browned on both sides, about 5-7 minutes. Remove from the skillet and set aside.
2. In the same skillet, add more olive oil if needed. Sauté garlic, then add cherry tomatoes, corn, and zucchini. Cook for 5 minutes or until vegetables are tender.
3. Meanwhile, cook pasta in salted water according to package instructions. Reserve 1/2 cup of pasta water, then drain.
4. Return kielbasa to the skillet. Add cooked pasta, reserved pasta water, and Parmesan cheese. Stir to coat evenly.
5. Season with salt and pepper. Serve hot, garnished with extra Parmesan or basil if desired.
Notes
This pasta can be served warm or at room temperature.
Swap kielbasa for chicken sausage or a plant-based version if desired.
Leftovers keep well in the fridge for up to 3 days.
