Ingredients
1 roll sugar cookie dough
16 oz cream cheese
3/4 cup granulated sugar
2 large eggs
1 1/2 tsp vanilla extract
2 tbsp all-purpose flour
1/2 cup sour cream
1/4 cup sprinkles or glaze (optional)
Instructions
1. Preheat oven to 350°F. Lightly grease a springform pan.
2. Press the sugar cookie dough evenly into the bottom. Bake for 10 minutes or until just set. Let cool.
3. In a large bowl, beat cream cheese and granulated sugar until smooth.
4. Add eggs one at a time, mixing slowly to avoid overbeating.
5. Stir in vanilla extract, flour, and sour cream until smooth.
6. Pour the mixture over the baked sugar cookie crust.
7. Place the pan in a water bath or set a water pan on the oven rack below.
8. Bake for 45–50 minutes, until the center is set but slightly jiggly.
9. Let cool to room temperature, then chill for at least 4 hours or overnight.
10. Decorate with sprinkles or glaze before serving.

This cheesecake must chill for several hours before serving for the best texture.
