Ingredients
4 slices thick-sliced brioche or challah bread
4 oz cream cheese
2 tbsp powdered sugar
1 tsp vanilla extract (divided)
1 cup fresh strawberries (chopped and sliced)
2 large eggs
1/4 cup milk or cream
2 tbsp butter
Instructions
1. In a bowl, beat cream cheese, powdered sugar, and 1/2 tsp vanilla until smooth. Stir in chopped strawberries, reserving some for topping.
2. Slice pockets into bread slices and stuff evenly with cream cheese filling.
3. In a separate bowl, whisk eggs, milk or cream, and remaining vanilla.
4. Heat butter in a skillet over medium heat. Dip each stuffed slice into egg mixture to coat both sides.
5. Cook 2–3 minutes per side until golden brown and crisp.
6. Top with remaining strawberries, a dusting of powdered sugar, or maple syrup before serving.
Notes
Use day-old bread for best texture.
Do not overfill to avoid spillage while cooking.
