Ingredients
120g cream cheese
60g powdered sugar
1 tsp vanilla extract
170g unsalted butter
100g brown sugar
50g granulated sugar
1 large egg
1 tsp vanilla extract
260g all-purpose flour
1/2 tsp baking soda
1/4 tsp salt
6 tbsp strawberry jam
Instructions
1. Mix softened cream cheese, powdered sugar, and 1/2 tsp vanilla until smooth. Freeze in small scoops for 30 minutes.
2. Cream butter with both sugars until fluffy. Beat in egg and 1/2 tsp vanilla.
3. Whisk together flour, baking soda, and salt. Add dry to wet and mix until dough forms.
4. Flatten cookie dough, place a frozen cream cheese ball inside, top with more dough, and seal. Add a small spoon of jam and swirl gently.
5. Chill the assembled cookies for 30 minutes in the fridge.
6. Preheat oven to 350°F (175°C). Bake cookies for 12–14 minutes until golden at the edges.
7. Cool on tray for 5 minutes, then transfer to a wire rack.
Notes
Serve slightly warm for the best texture and flavor.
