These Strawberry Cheesecake Cinnamon Rolls are the perfect fruity breakfast treat, combining fluffy homemade dough, creamy cheesecake filling, and sweet strawberries in every swirl. A show-stopping brunch dessert that’s bakery-worthy and bursting with flavor.
Ingredients
1 cup warm milk
2 ¼ tsp active dry yeast
½ cup granulated sugar
2 large eggs
⅓ cup unsalted butter, melted
4 cups all-purpose flour
1 tsp salt
8 oz cream cheese, softened
½ cup powdered sugar
1 tsp vanilla extract
1 ½ cups fresh strawberries, chopped
2 tbsp granulated sugar (for strawberries)
2 tsp cinnamon
⅓ cup brown sugar
(optional) 1 cup powdered sugar for glaze
(optional) 2–3 tbsp milk for glaze
(optional) ½ tsp vanilla for glaze
Instructions
1. Warm the milk and stir in yeast and a tablespoon of sugar. Let sit until foamy.
2. Mix in remaining sugar, melted butter, eggs, and salt. Gradually add flour to form a soft dough.
3. Knead until smooth, cover, and let rise for 1 hour or until doubled.
4. In a bowl, beat cream cheese, powdered sugar, and vanilla until smooth. Set aside.
5. Cook strawberries with 2 tbsp sugar over medium heat until softened. Cool completely.
6. Roll dough into a large rectangle on a floured surface.
7. Spread cream cheese mixture, then spoon the cooled strawberries on top.
8. Sprinkle with cinnamon and brown sugar.
9. Roll dough tightly and slice into 10–12 rolls.
10. Place rolls in a greased baking dish. Cover and let rise for 30 minutes.
11. Bake at 350°F for 25–30 minutes until golden.
12. Optional: Mix glaze ingredients and drizzle over warm rolls.
Notes
These are best served warm right out of the oven.
Make sure the strawberries are completely cooled before assembling.
You can prep the rolls the night before and bake in the morning.
