These Sticky Mongolian Meatballs and Broccoli are the perfect one-pan dinner idea packed with sweet-savory Mongolian sauce, juicy beef meatballs, and crisp broccoli. A healthy Asian-inspired meal great for family weeknights or easy entertaining.
Ingredients
1 lb ground beef
1/2 cup breadcrumbs
1 large egg
1 tablespoon soy sauce (for meatballs)
2 cups broccoli florets
2 cloves garlic, minced
1 teaspoon fresh grated ginger
1/3 cup brown sugar
1/3 cup soy sauce (for sauce)
1/2 cup water
1 tablespoon cornstarch
1 tablespoon water (for slurry)
2 green onions, sliced
1 teaspoon sesame seeds (optional)
Instructions
1. Preheat oven to 400°F.
2. In a bowl, mix ground beef, breadcrumbs, egg, and 1 tbsp soy sauce until just combined.
3. Roll into small meatballs and place on parchment-lined baking sheet.
4. Bake for 18–20 minutes until golden and cooked through.
5. Meanwhile, steam or sauté broccoli until just tender and vibrant.
6. In a saucepan, combine 1/3 cup soy sauce, garlic, ginger, brown sugar, and 1/2 cup water.
7. Bring to a simmer and stir in cornstarch slurry made with 1 tbsp cornstarch and 1 tbsp water.
8. Let sauce thicken for a few minutes.
9. Add baked meatballs to the sauce and stir until coated.
10. Serve with broccoli, garnish with green onions and sesame seeds.
Notes
Serve over steamed rice or noodles for a fuller meal.
For leaner meatballs, use ground turkey or chicken.
Make sauce ahead to speed up busy weeknight dinners.
