Ingredients
1 lb steak (sirloin, ribeye, or tenderloin)
12 oz rotini pasta
2 tbsp butter
4 garlic cloves, minced
1 cup heavy cream
1 cup freshly grated parmesan cheese
1 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
2 tbsp chopped parsley (for garnish)
Instructions
1. Heat olive oil and 1 tbsp butter in a large skillet over medium-high heat. Add cubed steak in a single layer and sear for 1-2 minutes without moving. Stir and cook another 2-3 minutes. Remove from pan and set aside.
2. Cook rotini in salted boiling water according to package instructions. Drain and reserve some pasta water.
3. In the same skillet, reduce heat to medium and add remaining butter and minced garlic. Sauté until fragrant, about 30 seconds.
4. Add heavy cream to the pan, bring to a simmer, and let it reduce slightly.
5. Stir in parmesan cheese until melted and smooth. Season with salt and pepper.
6. Toss cooked rotini into the sauce, adding reserved pasta water if needed.
7. Return steak bites to the skillet and mix into the pasta. Let it heat through for 1 minute.
8. Garnish with chopped parsley and serve hot.
Notes
Use freshly grated parmesan for best results.
Let steak rest a few minutes after searing to stay juicy.
Adjust sauce thickness with a splash of reserved pasta water.
