Ingredients
1 lb steak (sirloin, ribeye, or strip), cut into bite-size pieces
8 oz rotini pasta
4 cloves garlic, minced
1 cup heavy cream
1 cup freshly grated Parmesan cheese
2 tbsp butter
1 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
2 tbsp chopped parsley (optional)
Instructions
1. Heat olive oil and 1 tbsp butter in a skillet over medium-high heat. Season steak with salt and pepper, then sear in batches until browned. Set aside.
2. Cook rotini pasta in salted boiling water until al dente. Reserve 1/4 cup of pasta water, then drain pasta.
3. In the same skillet, melt remaining butter and sautée garlic until fragrant.
4. Pour in heavy cream and stir. Add Parmesan cheese and cook until sauce thickens.
5. Add cooked rotini to the sauce, tossing to coat. Use reserved pasta water to adjust consistency if needed.
6. Gently fold in the steak bites. Let them warm through in the sauce for a few minutes.
7. Serve hot, garnished with parsley and more Parmesan if desired.
Notes
Use freshly grated Parmesan for the smoothest sauce.
Don’t overcrowd the steak when searing for the best crust.
Add a splash of milk or cream when reheating leftovers to revive the sauce.
