Ingredients
2 to 3 salmon fillets
2 tablespoons sriracha sauce
3 tablespoons honey
2 tablespoons soy sauce
2 cloves garlic, minced
1 tablespoon lime juice
2 cups cooked rice
1 small cucumber, sliced
1 large carrot, julienned
1 cup shelled edamame, warmed
2 green onions, chopped
1 tablespoon sesame seeds
Instructions
1. Whisk together sriracha, honey, soy sauce, garlic, and lime juice to make the glaze.
2. Pat the salmon dry and place on a parchment-lined baking sheet or air fryer basket. Brush generously with glaze, saving some for later.
3. Bake at 400°F for 12–14 minutes or air fry at 390°F for 10–12 minutes until salmon flakes and caramelizes.
4. While salmon cooks, prep rice and toppings: slice cucumber, julienne carrot, warm edamame, chop green onions.
5. Assemble bowls: rice base, add salmon, surround with veggies, drizzle glaze, and finish with sesame seeds and green onions.
