Ingredients
2 eggs
3 tablespoons vegetable oil
2 cloves garlic, minced
1 teaspoon fresh ginger, grated
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 teaspoon honey
1/4 teaspoon red chili flakes
1 tablespoon chopped green onions
Instructions
1. Heat a generous amount of vegetable oil in a nonstick skillet over medium-high heat. Once hot, crack the eggs into the pan and fry for 2–3 minutes until edges are crispy and yolks remain soft. Remove and set aside.
2. Reduce heat to medium. In the same skillet, add more oil if needed and sauté minced garlic and grated ginger until fragrant.
3. Add soy sauce, rice vinegar, honey, and red chili flakes. Stir and simmer for 1 minute until slightly thickened.
4. Return fried eggs to the skillet, spoon sauce over them for 30 seconds.
5. Transfer to serving plates, drizzle with extra sauce, and sprinkle with chopped green onions.
Notes
Use a hot skillet and enough oil to get crispy edges.
Adjust chili flakes to your spice preference.
Serve immediately for best texture and flavor.
