Description

This spicy ground beef stir-fry bowl with garlic veggies and steamy rice is a fast, flavorful dinner perfect for busy nights. Made with ground beef, stir-fried vegetables, and a sweet and spicy sauce, this easy stir-fry recipe is perfect for meal prep or quick weeknight meals.


Ingredients

1 lb ground beef

3 tbsp soy sauce

2 tbsp sriracha

1 tbsp brown sugar

4 cloves garlic, minced

1 tsp fresh ginger, grated

1 cup carrots, thinly sliced

1 bell pepper, sliced

1.5 cups broccoli florets

3 cups cooked jasmine rice

1 tbsp sesame oil

2 green onions, sliced (optional)

1 tsp sesame seeds (optional)


Instructions

1. In a bowl, whisk together soy sauce, sriracha, brown sugar, and a splash of water. Set aside.

2. In a large skillet over medium-high heat, cook the ground beef until browned. Drain any excess fat.

3. Add minced garlic and ginger to the skillet with the beef. Stir in the prepared sauce and simmer for a few minutes until thickened.

4. In a separate pan, heat sesame oil and stir-fry the carrots, bell pepper, and broccoli until crisp-tender.

5. Spoon the cooked rice into bowls. Top with spicy beef and stir-fried veggies.

6. Garnish with green onions and sesame seeds, if desired. Serve hot.

Notes

This recipe is easily doubled for meal prep.

You can substitute the vegetables with what you have on hand.

To make it milder, reduce the amount of sriracha.
