Ingredients

4 boneless skinless chicken thighs

1 cup buttermilk

2 tablespoons hot sauce

1 cup all-purpose flour

1/4 cup cornstarch

1 teaspoon garlic powder

1 teaspoon paprika

1/2 teaspoon cayenne pepper

1 teaspoon salt

1/2 teaspoon black pepper

2 cups oil for frying

1/2 cup mayonnaise

1 tablespoon honey

1 tablespoon mustard

1 teaspoon hot sauce

8 pickle slices

4 brioche buns


Instructions

1. Combine buttermilk, hot sauce, half the garlic powder, and cayenne pepper in a bowl. Add chicken and marinate in fridge for at least 1 hour.

2. Mix flour, cornstarch, remaining spices, salt, and pepper in a shallow dish. Dredge chicken in this mix and coat well.

3. Heat oil to 350°F in a heavy skillet. Fry chicken for 5-7 minutes per side until golden and cooked through. Drain on wire rack.

4. Whisk mayonnaise, honey, mustard, and hot sauce to make the creamy sauce.

5. Toast brioche buns. Spread sauce on bottom bun, add chicken, pickles, and top bun. Serve immediately.
