Ingredients
1 ribeye steak
1 tablespoon Cajun seasoning
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon olive oil
2 tablespoons butter
8 oz fettuccine pasta
1 cup heavy cream
3/4 cup parmesan cheese, freshly grated
2 cloves garlic, minced
2 tablespoons parsley, chopped
Instructions
1. Pat steak dry and rub with Cajun seasoning, salt, and pepper. Let it sit at room temperature for 15 minutes.
2. In a skillet, heat olive oil and 1 tablespoon butter over medium-high. Sear steak 4–5 minutes per side. Remove and let rest.
3. Cook fettuccine in salted boiling water until al dente. Reserve 1/2 cup of pasta water and drain.
4. In the same pan, melt remaining butter. Add garlic and cook until fragrant. Stir in heavy cream and simmer 2–3 minutes.
5. Add parmesan and stir until melted and smooth. Add reserved pasta water if needed.
6. Toss cooked fettuccine in the sauce and heat for 1 minute.
7. Slice rested steak against the grain and serve over pasta. Garnish with parsley and extra parmesan if desired.
Notes
Let the steak rest before slicing to lock in the juices.
Reserve pasta water—it helps emulsify the sauce.
Use freshly grated parmesan for the smoothest, creamiest sauce.
